Usage:

Sodium diacetate is  a  kind of safety preservatives. it's safe and conform to international standard, widely used in food processing-such as in bread, confectionary, pastry (can add 0.4%), soft drinks  ( can add 0.04%), pickles (can add 0.3%), dried fish add 0.002%, fresh fish can put in 30% water solution for 30 minutes then through the water, the fish can keep in the 30°C for a week, taste won't change as fresh as before. In meat processing as well. So it is widely used in food industry
